At Roots, we attempt to conserve energy and reduce our environmental footprint wherever possible.
Our signature Avonite bar top is comprised of 40 percent recycled glass and is illuminated
through energy-efficient lighting.
All of the lights in the lower level prep area have been replaced with low-energy bulbs.
In the main kitchen, we use an energy and water-efficient commercial washing machine,
and the restroom features a Dyson Airblade, requiring 80 percent less energy than
other hand dryers. Antique barn board suspended from the dining room’s ceiling and
detailing the bar originated from the Williams Farm located on Route 7 North in Rutland Town.
In addition, our take-out boxes are made from 100% biodegradable materials.
